Agliano Terme is a small village located in the middle of the Monferrato vineyards. Giacomo and Veglia Ponzo established the ‘Macelleria Ponzo’ butcher shop there in 1947 and now it listed as one of the Botteghe Storiche (Historical Artisan Shops) in the province of Asti. Their son Francesco and daughter-in-law Aurelia then took over, in turn sharing their passion for this craft, ties with the territory and pursuit of quality with their own sons Massimo, Maurizio and Davide.

For three generations, the family-run Macelleria Ponzo artisanal butcher shop has been offering prized meat, selected from the finest, locally raised female Piedmont cattle breed. These small farms continue to raise their cattle using traditional methods and are particularly attentive to the nutrition of the animals.

By choosing local breeders, the family can follow the whole chain from farm to table, so they can guarantee safe, certified meat of the highest quality.

True to our philosophy that only fine quality meat can be used to make a great dish, the Ponzo family offers the best cuts of Piedmont beef in our butcher shop. These cuts are perfect as the feature ingredient in traditional local recipes, such as boiled, roasted or rolled meat, or are excellent for barbecues and other main courses.
 
Some of our must-try specialties include delicate-tasting fassone sausage made from lean meat, knife-minced fassone beef tartare and vitello tonnato (finely sliced cooked veal served with a tuna and caper-flavoured sauce), all representing traditional cuisine.
 
Not only that but in addition to beef, you will also find pork and poultry from selected farms in our artisanal butcher shop. And the house specialty – trippa in cassetta (tripe pressed into a form) – cooked to an old family recipe, ready for slicing and serving seasoned with a drizzle of oil, salt and pepper.

Piedmont-breed Fassona

The Fassona Piemontese cattle breed is native to Piedmont. It has an optimum yield and provides larger, finer cuts. All of this means it produces a very high quality meat.
It is very low in fat and very high in protein – the quintessential lean meat, tender and delicate. It is best served raw – ground or knife-minced – “Alba-style” or “Zingara-style”, but it is also delicious boiled, roasted or braised in the full-bodied, red Barbera d’Asti wine that truly comes into its own in Agliano Terme.

A quality selection

The Macelleria Ponzo selects only locally-sourced Fassona Piemontese beef from the Monferrato territory, which has been designated by UNESCO as a World Heritage Site, together with Langhe and Roero. These small local farms focus on controlled, natural feeding and give the animals time to grow naturally. The balanced nutrition and non-intensive breeding method give the meat a fine consistency and flavour.
For the Ponzo family, this quality is synonymous with zero-mile, safe, healthy, tasty and guaranteed meat.

The Ponzo family dispenses advice and recommendations to each and every customer, who can choose whatever suits their tastes and needs from the finest Fassona Piemontese cuts: T-bone and boneless steak, cuts used for boiled meats, tenderloin and sirloin, ground beef, knife-minced or Alba-style.

 

Besides being an artisanal butcher shop, Macelleria Ponzo is also a Charcuterie.

In our shop you will find raw and cooked artisan salamis, house-made cotechino (large pork sausage) and a selection of locally sourced cured meats, including the Cuneo PDO fine raw, cured ham.
Our raw and cooked salamis are made from carefully selected, knife-cut local pork, only inserted in natural animal intestine casings.

In 2007, the Ponzo family decided to expand their business and opened a fresh pasta laboratory.

The artisan specialties draw their inspiration from traditional recipes, such as agnolotti al plin, or quadrati, pasta filled with meat from our butcher shop. Or if you love trying out new flavours and pairings, you can also choose from other fillings, made from locally-sourced seasonal produce, including artichokes, asparagus, borage, pumpkin, spinach, greens and, last but not least, leeks together with the famous Piedmont hazelnuts and the PDO Raschera cheese.
 

If your tastes are more traditional, you can choose from the fresh and dried, long thin egg-based tagliatelle and tajarin. In addition to the wide range of meat and pasta products, you can also choose from a selection of cheeses and other traditional products including the Piedmont antipasto, the ready-to-use red and green bagnetto sauce, stuffed round chilli peppers.
